Apple Sharlotka
The Story
The dessert Russian Sharlotka was created by a French chef who served Russian Tzar in London in the 19th century. Some call this dessert a Russian version of Apple pie. The texture of Sharlotka is light and delicate, and can be served on its own, or with a scoop of ice cream or some whipped cream as well.
Recipe
Ingredients
- 1 cup of flour 
- 1 cup of sugar 
- 4 eggs 
- Pinch of salt 
- 1/2 teaspoon of baking powder 
- 6 granny smith apples 
- 1 teaspoon of vanilla extract 
- 1 teaspoon of lemon zest 
- 2 teaspoons of lemon juice 
- 1 teaspoon of cinnamon powder 
Instructions
- Peel the apples and remove the middle/seeds. Cut the apple in long slices and squeeze about 2 tablespoons of lemon juice on them so that they don’t oxidate . Add cinnamon and mix. Then lay the apples on greased baking dish. 
- Blend 4 eggs with 1 cup of sugar. Start with blending the eggs, now add 1 cup of sugar slowly. Then add pinch of salt. The foam should form on the batter. 
- Take flour and sift it, add baking powder to it and mix it. 
- Now add flour slowly to the batter without using blender . Start mixing it. 
- Now that the batter is ready, add lemon zest to it. Then cover the apples with batter. 
- Bake for 45 minutes in 365F. After 30 minutes pass, take it out and check the batter for doneness by sticking a toothpick in it. If the toothpick comes out clean, then the batter is done. If the toothpick is not clean, then bake for another 10 minutes or so. 
- Sharlotka can be served hot or cold. Enjoy!
